Million dollar chicken casserole is the comfort food recipe I make when I need one dish to feed eight people and end every conversation at the table. Shredded chicken and egg noodles in a savory cream sauce, a tangy cottage cheese layer running through the middle, and a buttery cracker crust that shatters under the spoon.
The cottage cheese layer is what earns the name.
It's a casserole with a middle. Most chicken casseroles are one texture from edge to edge. The whipped cottage cheese, cream cheese and sour cream layer sits between the noodles and the topping, so every forkful gets creamy-tangy, savory, and crunchy at once.
Cottage cheese does the heavy lifting. It adds richness and about 14 grams of protein per cup without the heaviness of a straight cream sauce — the same reason it anchors our cottage cheese egg bites and our chocolate cottage cheese mousse.
It's genuinely high protein comfort food. Each of the eight servings lands around 44g of protein, which is unusual for a casserole. See what that covers for your day with our protein calculator.
Here's what you'll need.
Every one of these is a regular grocery aisle item, and a store rotisserie chicken covers the whole protein requirement in one stop. Full-fat cottage cheese and block cream cheese are the two worth being particular about — low-fat versions weep water into the dish as it bakes.
Here's how it all comes together.
Step 1 — Shred the chicken
Pull a rotisserie chicken or shred cooked breasts with two forks — you want about 4 packed cups. Shred it a little coarser than feels right; fine strands disappear into the sauce and you lose the texture entirely.
Step 2 — Boil the noodles just under
Cook the egg noodles two minutes shy of the package time and drain them well. They keep cooking in the oven, and fully-cooked noodles turn to mush by the time the topping is golden.
Step 3 — Whip the million-dollar layer
Beat the softened cream cheese, cottage cheese, sour cream, parmesan and garlic together until it's smooth and spreadable. Thirty seconds with a hand mixer takes the curds out of the cottage cheese completely, which is the difference between silky and grainy.
Step 4 — Build the base
Fold the drained noodles and shredded chicken together with the cream of chicken soup, broth and seasonings, then spread the whole thing into a buttered 9x13 dish in an even layer.
Step 5 — Spread the cheese layer
Dollop the cottage cheese mixture over the base and spread it edge to edge with an offset spatula. Dolloping first and spreading second keeps you from dragging noodles up into the layer.
Step 6 — Butter the crackers and bake
Toss crushed buttery round crackers with melted butter until every crumb is coated, scatter them over the top, and bake at 350°F for 35–40 minutes until the edges bubble and the crust is deep gold.
Things I learned while testing this recipe.
Undercook the noodles, always. Two minutes short of package time. I made this three times before I stopped fighting mushy noodles, and this was the entire fix.
Whip the cottage cheese, don't stir it. Stirring leaves visible curds that read as grainy once baked. A hand mixer, a blender, or even a food processor for twenty seconds makes it look and taste like a cheesecake layer.
Add the crackers at the start, not the end. I tried holding the topping back until the last ten minutes to keep it crisp. It browns unevenly that way — coated in butter from the beginning, it toasts steadily and stays crunchy for days.
Let it rest 10 minutes. Straight from the oven it runs across the plate. Ten minutes on the counter and it sets into clean, scoopable squares.
Make it ahead, freeze it, feed a crowd.
Assemble a full day ahead. Build it through the cheese layer, cover, and refrigerate up to 24 hours. Add the buttery cracker topping just before it goes in and give it an extra 10 minutes in the oven from cold.
It freezes properly. Wrap the unbaked casserole (no topping) tightly and freeze up to 3 months. Thaw overnight, top, and bake — the same strategy that makes our baked ziti a standing freezer staple here.
One dish, eight plates, 44g of protein each. That's what makes this the potluck and new-baby-meal dish in our house. Check your own target on the protein calculator and see how far one serving goes.
Here's what I'd serve with this.
Something green and sharp to cut the richness — a simple vinaigrette salad, or the roasted peppers and onions from our sheet pan chicken fajitas.
If you're feeding a real crowd, add a pot of white chicken chili and let people take a bowl of one and a square of the other.
Crusty bread or garlic bread is the traditional move, and it's very good for chasing the last of the cream sauce around the dish.
Want a second comfort dish on the table? Baked mac and cheese bakes at the same 350°F, so they can share the oven.
Cooking for a weeknight instead? Today's other new recipe, smash burger tacos, is on the table in twenty-five minutes.
Just in case you have leftovers.
Storing: cover tightly and refrigerate up to 4 days — it's genuinely better on day two, once the cottage cheese layer has set and the flavors have settled. For the freezer, portion baked squares into individual containers and freeze up to 3 months; they thaw into excellent single lunches.
Reheating: the oven is worth the wait. Cover with foil and warm at 325°F for 20 minutes, then pull the foil for the last 5 to re-crisp the cracker topping. In a microwave, use 70% power in 90-second bursts and accept that the crust will soften — a quick 3 minutes in a 375°F air fryer afterward brings it right back.
★★★★★ 4.9 from 52 reviews — creamy shredded chicken and egg noodles under a whipped cottage cheese layer and a golden buttery cracker crust. Feeds 8, 55 minutes, 44g protein per serving.
Prep 15 min · Cook 40 min · Total 55 min · Serves 8 · Category: Comfort Food · Cuisine: American
Ingredients
2 lb cooked chicken, shredded (about 4 packed cups — one large rotisserie chicken)
12 oz wide egg noodles
1 can (10.5 oz) condensed cream of chicken soup
¾ cup chicken broth
1 tsp onion powder, 1 tsp garlic powder
½ tsp salt, ½ tsp black pepper
½ tsp dried thyme
Million dollar layer: 8 oz block cream cheese, softened
Prep. Heat the oven to 350°F and butter a 9x13 baking dish. Shred the cooked chicken into coarse pieces — about 4 packed cups.
Boil the noodles. Cook the egg noodles in salted water 2 minutes short of the package time, then drain well.
Whip the cheese layer. Beat the softened cream cheese, cottage cheese, sour cream, parmesan and minced garlic with a hand mixer until completely smooth, about 30 seconds.
Build the base. Fold the drained noodles and shredded chicken with the cream of chicken soup, broth, onion powder, garlic powder, salt, pepper and thyme. Spread evenly in the prepared dish.
Spread the layer. Dollop the cottage cheese mixture over the base, then spread it edge to edge with an offset spatula.
Top and bake. Toss the crushed crackers with the melted butter until evenly coated, scatter over the casserole, and bake 35–40 minutes until bubbling at the edges and deeply golden on top. Rest 10 minutes, then finish with parsley and serve.
Notes: Use full-fat cottage cheese and block cream cheese — low-fat versions release water and the casserole turns loose. Rotini, penne or even cooked rice all work in place of egg noodles. For a from-scratch version, replace the canned soup with a quick roux of 3 tbsp butter, 3 tbsp flour and 1¼ cups milk. Panko tossed with the same butter is a good substitute if you don't keep crackers. To make ahead, assemble through the cheese layer, refrigerate up to 24 hours, add the topping just before baking and add 10 minutes to the bake time.

Why is it called million dollar chicken casserole?
The name comes from the "million dollar" cream cheese and cottage cheese layer that runs through the middle of the dish — the same idea as million dollar spaghetti. It's a tangy, whipped cheese stripe that makes an ordinary chicken casserole taste like it took far more effort than it did.
Can I make million dollar chicken casserole ahead of time?
Yes, and it's better for it. Assemble through the cheese layer, cover, and refrigerate up to 24 hours. Add the buttery cracker topping just before baking and give it about 10 extra minutes since it's starting cold. Unbaked and untopped, it also freezes for up to 3 months.
Can I use something other than cottage cheese?
Whole-milk ricotta is the closest swap and gives a slightly sweeter, denser layer. Greek yogurt works for extra protein but is noticeably tangier and can separate at high heat, so keep the oven at 350°F if you go that route. Whichever you use, blend it smooth first.
What chicken should I use?
A store rotisserie chicken is the fastest option and gives you close to the full 4 cups. Poached or baked chicken breasts, leftover roast chicken, or even canned chicken breast drained well all work. Shred coarsely so the meat stays distinct in the finished casserole.
