Step 1 — Heat the oven and the pan

Back in the oven for 18 to 20 minutes, tossing once halfway. You're looking for actual dark spots on the broccoli and sausage — that char is the flavor, and pulling it at pale-golden is underselling the whole dish.

Why are my sheet pan vegetables soggy instead of crispy?

Can I use raw sausage instead of smoked?
