Here's how it all comes together.
Step 1 — Pound and season
Halve the chicken breasts horizontally and pound to an even ½ inch. Season both sides with salt, pepper, and garlic powder — even thickness is the difference between juicy and dry.

Step 2 — Toast the panko

Step 3 — Set up the breading station
Line up three shallow dishes: flour, beaten eggs, and the toasted panko mixed with grated parmesan and Italian seasoning.

Step 4 — Bread the cutlets
Dredge each cutlet in flour, dip in egg, then press firmly into the panko so every inch is coated. Set them on a wire rack over a baking sheet.

Bake at 425°F for 15–18 minutes on the rack, until the crust is deep golden and the chicken hits 165°F. The rack lets hot air crisp the underside — no soggy bottoms.

Step 6 — Sauce, cheese, broil
Spoon marinara over the center of each cutlet, top with mozzarella and a little more parmesan, and broil 2–3 minutes until bubbly and spotted brown. Rest 5 minutes, then finish with basil.

Things I learned while testing this recipe.
Toast the panko first — always. Oven-baked breading never browns properly from raw; four minutes in a skillet buys you fried-level color.
Sauce the center only. Flooding the whole cutlet steams the crust. Leave a crispy border and serve extra marinara on the side.
Low-moisture mozzarella beats fresh here. Fresh mozzarella weeps water onto your crust; the block stuff melts dry and browns better.
Rest before slicing. Five minutes lets the cheese set and the juices redistribute so the crust stays attached.
Make it ahead, make it work harder.
Bread the cutlets a day early. Keep them uncovered on the rack in the fridge — the coating actually adheres better after a rest.
Freeze breaded, unbaked cutlets up to 2 months; bake from frozen, adding 6–8 minutes.
