This crockpot crack chicken is the recipe I make on the days when dinner needs to cook itself: chicken breasts, a block of cream cheese and a packet of ranch seasoning go into the slow cooker in the morning, and by dinner it’s creamy, shredded crack chicken loaded with crispy bacon and sharp cheddar. We pile it on toasted buns, over baked potatoes or into lettuce cups, and at 38g of protein a serving it’s the rare comfort food that also behaves like a high-protein dinner. It’s the cousin of my Mississippi chicken — same dump-and-go effort, totally different flavor.
Five real ingredients plus salt and pepper: boneless chicken breasts (thighs work too), a block of full-fat cream cheese, a packet of ranch seasoning (or 3 tablespoons homemade), crispy bacon, sharp cheddar and a splash of chicken broth to keep everything saucy.
Lay the chicken breasts in the bottom of a 6-quart slow cooker and sprinkle the ranch seasoning, garlic powder and pepper evenly over the top. Set the block of cream cheese right on the chicken — no need to cut it up.
Pour 1/2 cup chicken broth around (not over) the cream cheese. It keeps the chicken from drying out on the bottom and gives you just enough liquid to turn into sauce — more than that and the crack chicken turns soupy.
Cover and cook on LOW for 4 hours (or HIGH for 2 1/2) until the chicken shreds easily with a fork and reads 165°F. Shred it right in the slow cooker with two forks — the cream cheese and juices around it become the sauce.
Add 1 1/2 cups of the shredded cheddar and most of the crumbled bacon and stir until the sauce is smooth and every strand of chicken is coated. If it looks thick, splash in a tablespoon or two of broth.
Scatter the rest of the cheddar, bacon and sliced green onions over the top, cover for 5 minutes so the cheese melts, then taste for salt (the ranch and bacon usually cover it).
Pile it onto toasted brioche buns for crack chicken sandwiches, spoon it over baked potatoes or rice, or go low-carb with lettuce cups. A small bowl with crackers makes a very good game-day dip too.
