These cottage cheese pizza bowls are what I make when I want pizza on a Tuesday and also want to hit my protein for the day. Seasoned cottage cheese, marinara, a blanket of mozzarella and crispy pepperoni, baked until bubbling — 36 grams of protein per bowl and about 10 minutes of actual work.
Full-fat cottage cheese, a good jarred marinara, mozzarella, parmesan, pepperoni, Italian seasoning, garlic powder, red pepper flakes and fresh basil — that's the whole list.
Preheat the oven to 400°F. In a bowl stir the cottage cheese with the parmesan, Italian seasoning, garlic powder and a pinch of black pepper. Taste — it should be savory and herby, like a ricotta filling.
Divide the mixture between four 8-ounce oven-safe ramekins (or one small baking dish) set on a sheet pan. Smooth the tops.
Spoon ¼ cup marinara over each ramekin and spread it to the edges so every bite gets sauce.
