Here's what you'll need.
Boneless skinless chicken thighs, baby potatoes, a lemon, garlic, olive oil and a few dried herbs from the spice drawer — that's the whole list, and none of it is fussy.
Here's how it all comes together.
STEP 1 — SEASON THE POTATOES
Preheat the oven to 425°F and line a large rimmed sheet pan with parchment. Halve the baby potatoes and toss them in a bowl with olive oil, half the garlic, paprika, rosemary, salt and pepper until every cut side is glossy.
STEP 2 — MARINATE THE CHICKEN
In the same bowl (no need to wash it), rub the chicken thighs with olive oil, the rest of the garlic, lemon zest, lemon juice, oregano, paprika, salt and pepper. Even 10 minutes of sitting time while the potatoes start roasting makes a difference.
STEP 3 — GIVE THE POTATOES A HEAD START
Spread the potatoes cut-side down on the pan in a single layer and roast for 15 minutes on their own. This is the step that makes them actually crispy instead of steamed under the chicken.
STEP 4 — ADD THE CHICKEN
Pull the pan out, push the potatoes to the edges, and nestle the chicken thighs in the middle with a few lemon slices tucked around them. Pour any marinade left in the bowl over the top.
STEP 5 — ROAST UNTIL GOLDEN
Roast for 22–25 minutes more, until the chicken is golden at the edges and reads 165°F on a thermometer and the potatoes are deep brown and crisp. For extra color, broil for the last 2 minutes. Rest 5 minutes, then shower with parsley and a squeeze of lemon.
Cut-side down is non-negotiable for the potatoes. The flat side pressed against the hot pan is where the crust forms. Tossed in randomly, about half of them come out soft.
Don't crowd the pan. If the potatoes and chicken are touching everywhere, they steam. Use a full-size half sheet pan (18×13) or split everything across two pans.
Thighs are more forgiving than breasts. Thighs stay juicy even if the potatoes need 5 extra minutes. If you use breasts, cut them in half horizontally and add them 5 minutes later than the thighs.
Lemon slices, not just juice. The slices caramelize on the pan and give you something bright to squeeze over the plate at the table.

Reheating: Spread everything back on a sheet pan and roast at 400°F for 8–10 minutes, or air fry at 375°F for 5 minutes — either way the potatoes crisp right back up. The microwave works in a pinch, but the potatoes go soft.

For chicken breasts, halve them horizontally and add them 5 minutes after the thighs would go in. Bone-in thighs work too — add them at the same time as the potatoes and roast 40–45 minutes total. Use two pans rather than crowding one.
