These air fryer chicken thighs are the recipe that made my family stop asking for fried chicken — shatteringly crackly skin, juicy dark meat, and a 5-ingredient smoky-sweet rub, done in 35 minutes. Here's how it all comes together.
Step 1 — Pat the thighs bone dry
Blot every thigh on both sides with paper towels. Dry skin is the whole secret to crispy air fryer chicken thighs — moisture steams, dryness crisps.
Step 2 — Toss with oil and the smoky rub
Toss the thighs with olive oil, then the paprika, garlic powder, onion powder, brown sugar, salt, and pepper. Work some rub under the skin where you can.
Step 3 — Start skin-side down
Arrange the thighs in a single layer, skin-side DOWN, in the basket. Air fry at 400°F for 12 minutes — starting upside down bastes the skin in its own rendering fat.
Step 4 — Flip and crisp
Flip skin-side up and air fry another 10–12 minutes, until the skin is deep golden and an instant-read thermometer hits 175–185°F at the bone.
Step 5 — Rest before you cut
Rest the thighs 5 minutes on a rack so the juices settle and the skin stays crackly. Squeeze lemon over just before serving.
Things I learned while testing this recipe.
Bone-in, skin-on is non-negotiable for the crispy version. Boneless skinless works (shave off 6–8 minutes), but you lose the crackle that makes this recipe famous.
Don't crowd the basket. Air needs to move around every thigh — cook in two batches rather than overlapping. The second batch cooks faster in the preheated basket.
Thighs are better at 180°F than 165°F. Unlike breast, thigh collagen melts between 175–185°F, which is why the meat gets more tender past "technically done."
Sugar burns past 400°F. If your air fryer runs hot, drop to 380°F and add 2–3 minutes so the brown sugar caramelizes instead of scorching.

Bone-in, skin-on thighs take 22–24 minutes at 400°F — 12 minutes skin-side down, then 10–12 minutes skin-side up. Boneless thighs take about 16 minutes at 380°F.
What temperature should air fryer chicken thighs be cooked to?
Pull them at 175–185°F at the bone. Thighs are safe at 165°F, but dark meat gets more tender — not less — as the collagen melts up to 185°F.
Why isn't my chicken skin crispy in the air fryer?
Almost always wet skin or a crowded basket. Pat the thighs completely dry, don't let them touch, and start skin-side down so the fat renders before the final crisp.
Can I use frozen chicken thighs in the air fryer?
Yes — air fry at 380°F for 10 minutes to thaw the surface, then season and continue the recipe, adding about 5 minutes to the total time.
