Air fryer chicken breast

This air fryer chicken breast recipe is the one I make more than anything else on this site — a smoky paprika-garlic rub, twenty minutes start to finish, and chicken that comes out juicy every single time instead of dry and stringy. It's the building block behind half my high protein bowls, and it's the first thing I'd teach anyone who just bought an air fryer.

This is the juicy chicken breast the air fryer was made for.

Here's what you'll need.

Seven pantry spices and a bottle of olive oil. If your chicken breasts are on the huge side (over 10 oz), slice them in half horizontally so everything cooks evenly.

Ingredients for air fryer chicken breast portioned into small bowls — raw chicken breasts, olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, pepper, lemon and parsley

Here's how it all comes together.

Step 1 — Pound the chicken to an even thickness

Lay each breast between two sheets of parchment and give the thick end a few whacks with a rolling pin until the whole thing is about ¾ inch thick. This is the single most important step — an even breast cooks evenly, and the thin end stops drying out while you wait for the thick end to catch up.

Step 2 — Oil and rub

Rub the breasts all over with olive oil, then sprinkle on the paprika-garlic mix and press it in with your hands so every surface is coated. The oil is what turns the spices into a crust instead of a dusty coating.

Step 3 — Into the basket, single layer

Preheat the air fryer to 380°F for three minutes, then lay the chicken in a single layer with a little space between pieces. Crowding traps steam and you lose the crust — cook in two batches if you have to.

Step 4 — Cook 9 minutes, flip, 7 more

Air fry for 9 minutes, flip with tongs, then cook another 6 to 8 minutes depending on thickness. The top should be deeply golden and the edges just starting to crisp.

Step 5 — Check the temperature

Pull the chicken the moment an instant-read thermometer hits 160–162°F in the thickest part; it will climb to a safe 165°F as it rests. Cooking to 165°F in the basket is how everybody ends up with dry chicken.

Step 6 — Rest, then slice

Let it sit on a board for 5 minutes before slicing. The juices redistribute and you get that glossy, juicy interior instead of a puddle on the cutting board. Finish with a squeeze of lemon and a little chopped parsley.

Things I learned while testing this recipe.

Meal prep it — this is the whole point.

Here's what I'd serve with this.

Just in case you have leftovers.

Storing: refrigerate whole or sliced in an airtight container up to 4 days. Store it whole if you can — sliced chicken dries out faster. Cooked breasts also freeze well for up to 3 months; slice first so you can pull out just what you need.

Reheating: the air fryer at 350°F for 3 to 4 minutes brings the crust back without overcooking. In the microwave, cover the chicken with a damp paper towel and heat in 30-second bursts. Cold, sliced straight from the fridge over a salad, is honestly how I eat most of it.

Instructions

  1. Pound. Place each breast between parchment and pound the thick end until the whole breast is an even ¾ inch thick. Pat dry.

  3. Preheat. Preheat the air fryer to 380°F for 3 minutes. Arrange the chicken in a single layer with space between pieces (cook in two batches if needed).
  4. Cook. Air fry 9 minutes, flip, then cook 6–8 minutes more, until deeply golden.
  5. Temp. Pull the chicken when an instant-read thermometer reads 160–162°F in the thickest part.
  6. Rest and slice. Rest 5 minutes (it will climb to 165°F), then slice against the grain. Finish with lemon and parsley.

Notes: For cutlets (breasts halved horizontally), cook 6 minutes, flip, then 5–6 minutes. From frozen rubbed breasts: 360°F for 22–26 minutes, flipping halfway. Air fryers vary — start checking the temperature at the 14-minute mark the first time you make this. Swap the smoked paprika for Italian seasoning or a taco blend and the method stays the same.

FAQ

How long do you cook chicken breast in the air fryer?
For an average 7–8 oz breast pounded to ¾ inch, 15 to 17 minutes at 380°F, flipping once at the 9-minute mark. Thin cutlets take 11 to 12 minutes; very thick breasts can take 20. Go by temperature, not the clock.
What temperature should air fryer chicken breast be?
Take it out of the basket at 160–162°F in the thickest part and rest it 5 minutes — carryover heat brings it to the safe 165°F without overcooking. An instant-read thermometer is the best $15 you'll spend on this recipe.
Why is my air fryer chicken breast dry?
Almost always one of three things: the breast was uneven so the thin end overcooked, it was cooked all the way to 165°F in the basket, or it was sliced immediately without resting. Fix those three and dry chicken disappears.
Can I cook frozen chicken breast in the air fryer?
Yes. Rub it while frozen (the oil helps the spices stick), then cook at 360°F for 22 to 26 minutes, flipping halfway, until it reads 160°F. The crust is a little less even than from thawed, but it works on a busy night.
