This dense bean salad is the viral recipe that actually earned its hype in my kitchen: two kinds of beans, crunchy cucumber, cherry tomatoes, red onion, roasted red peppers, salty feta and diced salami, all tossed in a sharp lemon-Dijon vinaigrette and packed into containers for the week. The “dense” part is the point — it is a salad built on beans and protein rather than lettuce, so it does not wilt, it fills you up, and it tastes better on Wednesday than it did on Sunday. Twenty minutes of chopping gets you six lunches at 24g of protein and 8g of fiber each, which is why it has joined my Mediterranean chickpea salad and Greek yogurt chicken salad in the permanent meal prep rotation. Scoop it up with cottage cheese flatbread and lunch is done.
Everything is pantry or fridge staples: canned chickpeas and cannellini beans, English cucumber, cherry tomatoes, red onion, roasted red peppers, feta, salami (or cooked chicken), parsley and dill, plus lemon, olive oil, red wine vinegar, Dijon, garlic, salt and pepper for the vinaigrette.
Tip both cans of chickpeas and cannellini beans into a colander and rinse under cold water until the water runs clear, then shake well and let them drain while you chop. Rinsing removes the starchy canning liquid that would make the dressing cloudy and cuts the sodium by about 40 percent.
Dice the cucumber into 1/2-inch pieces, halve the cherry tomatoes, finely dice the red onion and chop the roasted red peppers. Keep the pieces roughly bean-sized so every forkful has a bit of everything.
In a jar, combine the lemon juice, olive oil, red wine vinegar, Dijon, grated garlic, salt and pepper. Seal and shake hard for 15 seconds until creamy and emulsified. Taste it — it should be bright and assertive.
Add the drained beans, cucumber, tomatoes, red onion and roasted peppers to a large glass bowl and give them a gentle toss so the colors are evenly distributed.
Crumble in the feta, add the diced salami and scatter the chopped parsley and dill over the top. If you are using chicken instead of salami, add it here.
Pour the vinaigrette over everything and toss gently until glossy. Taste for salt and lemon. Serve right away or, better, divide into six containers and refrigerate — it is at its best from the next day on.
If building filling, high protein, high fiber meals you actually look forward to is the goal, this salad is a page straight out of the Ultimate GLP-1 High Protein High Fiber Cookbook.Storing: Refrigerate in airtight containers for up to 5 days. It is at its best on days two and three. If you want it to last the full five days, salt and drain the cucumber first and add any avocado the day you eat it. Do not freeze; the vegetables turn to mush.
Reheating: No reheating needed, and please do not — this is a cold salad. Give it a stir before eating, and if the beans have soaked up all the dressing by day four, a squeeze of lemon and a drizzle of olive oil bring it right back.

Also new this week: air fryer chicken drumsticks — crispy, 32g protein a serving, and very good pulled off the bone and tossed into this salad the next day.
Chickpeas, cannellini beans, cucumber, cherry tomatoes, red onion, roasted red peppers, feta, salami and fresh herbs tossed in a sharp lemon-Dijon vinaigrette. 20 minutes, no cooking, 24g protein and 8g fiber a serving, and it keeps 5 days.
Nutrition is calculated with salami; with 2 cups diced chicken breast instead, expect about 310 calories and 29g protein a serving. For 5-day prep, salt the diced cucumber for 10 minutes and pat dry before adding. Vegetarian: skip the salami and add 1/2 cup toasted sunflower seeds plus an extra can of beans, about 17g protein a serving.
If this dense bean salad is your kind of lunch, the Ultimate GLP-1 High Protein High Fiber Cookbook is built around exactly this formula — protein and fiber in every meal, prepped ahead, and genuinely good to eat.
It is a meal-prep salad built on beans instead of lettuce, with lots of chopped vegetables, a protein like salami, chicken or cheese, fresh herbs and a sharp vinaigrette. The name comes from TikTok creator Violet Witchel, and the idea is a salad dense enough to be a full meal that holds up all week.
Up to 5 days in an airtight container, and it is actually best on days two and three once the beans have soaked up the dressing. Salt and drain the cucumber first if you want it crisp through day five.
This version has 24g protein a serving from the chickpeas, cannellini beans, feta and salami. Swap the salami for diced chicken breast and it climbs to about 29g, with 8g of fiber either way.
Yes. Any firm canned bean works: kidney, black, great northern, butter beans or a mix. Avoid very soft beans like pinto, which break down after a day or two in the dressing. Rinse whatever you use until the water runs clear.
Very. It is high in protein and fiber, full of vegetables and dressed with olive oil and lemon rather than mayo. At about 370 calories a serving with 24g protein and 8g fiber, it is a filling lunch that fits Mediterranean, high protein and GLP-1 style eating.
