Boneless chicken breasts, flour, two eggs, panko breadcrumbs, grated parmesan, garlic powder, onion powder, smoked paprika, salt and pepper, and olive oil spray. That is the whole list.
Cut the chicken breasts into 1½-inch pieces — roughly the size of a walnut. Keep them even so they finish at the same time, and pat them dry with paper towel so the flour sticks.
Bowl one: flour with half the salt and pepper. Bowl two: eggs beaten with a tablespoon of water. Bowl three: panko, parmesan, garlic powder, onion powder, smoked paprika and the rest of the salt, mixed well. Line them up in that order.
Work in batches: flour, shake off the excess, egg, let it drip, then press firmly into the panko so it sticks on all sides. Set the breaded pieces on a rack. Pressing is the difference between a crust that stays on and one that falls off in the basket.
Preheat the air fryer to 400°F for 3 minutes. Lay the nuggets in a single layer with a little space between them — two batches if you need to — and spray the tops generously with olive oil. Dry panko does not brown; the spray is what makes it golden.
Air fry at 400°F for 6 minutes, flip each nugget with tongs, spray the second side and cook another 5 to 6 minutes. They are done when deep golden and an instant-read thermometer in the thickest piece reads 165°F.
Cut one open — the inside should be white and juicy, not pink. Rest them 2 minutes on the rack (not on a plate, where the bottoms steam) and serve with honey mustard, ketchup or ranch.
